Recipe for Some Wacky Chicken Enchiladas


Here are the ingredients you need for some yummy enchiladas!

8 8-inch flour tortillas
2 cups shredded Montery Jack cheese, divided
2 cups cooked, shredded chicken
3 tablespoons butter
3 tablespoons all-purpose flour
14 oz chicken broth
1 cup sour cream
1 7-ounce can diced green chiles
cilantro for garnish, optional



Here are your baking instructions!

Preheat oven to 425 degrees Fahrenheit. Spray a 9*13 inch baking dish with nonstick cooking spray. Combine 1 cup of cheese and the chicken. Place some of it down the center of each tortilla and roll it up, in the dish, with the seam down.

Place butter in a skillet and melt over medium heat. Stir in flour and cook for 1 minute. Slowly add broth. Cook until thickened. Stir in sour cream and chiles. Pour over top of ecnhiladas. Sprinkle remaining cheese on top.

Bake in the oven for 20-25 minutes, or until the cheese is melted and bubbly. Add cilantro if desired.
